Here are three entrees which should see you through the cold month of February!

 

Applesauce Meatloaf

1 lb ground beef            1 egg slightly beaten

1 cup breadcrumbs            2 tbsp chopped onion

½ tsp salt                        pepper to taste

1 tsp celery flakes            1 cup applesauce

4 tsp mustard                        ½ tsp vinegar

1 tbsp brown sugar

 

Combine first seven ingredients, ½ cup applesauce and 1 tsp mustard. Blend thoroughly and form into mound in loaf pan. Mix remaining applesauce and mustard with the vinegar and brown sugar, spread mixture on top of meatloaf and bake at 350 degrees for one hour.

 

Beef and Chicken Casserole

1 ½ lb ground beef                        1 cup chopped celery

½ cup chopped onion                        2 tsp soya sauce

½ tsp seasoned salt                        1 small can peas

1 pkg Chicken Noodle Soup            1 small can mushrooms

1 ½ cup hot water                        ½ cup uncooked rice

 

Brown rice, celery, onion, soya sauce and seasoned salt. Mix well, pour in large casserole, cover and bake 1 ½ hours at 350 degrees. Remove cover and bake another ½ hour. Serves 8.

 

Crustless Quiche

1 tbsp butter                                    2 cups chopped ham

2/3 cup fine bread crumbs            ½ cup finely chopped green onion

3 eggs, slightly beaten                        1 cup cheddar cheese shredded

Salt and pepper to taste.

 

Melt butter and sauté onion. Add all ingredients and mix well. Turn into a greased 8" square pan or quiche pan. Bake at 350 degrees for approx. 45 minutes or until knife comes out clean. Let stand seven minutes. Serves six.
