It's picnic time, so here are three recipes I picked up from several cookbooks, both old and new.

All credit to writers, publishers, and of course the cooks themselves.

 

Tuna patties: a zestful change from hamburgers

Combine together:

  • 7oz tin of Tuna, drained & flaked
  • 1/2 cup dried breadcrumbs
    1/4 cup each chopped celery
  • 1/4 cup each chopped onion
    2 tbsp sweet pickle relish
  • 1/4 cup mayonnaise
    1/2 tsp lemon juice
  • 1 egg, beaten           
    1/2 tsp onion powder
  • Salt & pepper

Serve on toast or split toasted buns with lettuce and tomatoes.

 

Apple crunch muffins: nice & spicy with fruity flavour

Combine together:

  • 1/2 cup brown sugar
  • 1 1/2 cups flour           
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves                                   
  • 1/2 cup raisins

Whisk together:

  • 2 eggs, beaten
  • 1/2 cup each of buttermilk, oil
  • 1 cup grated apple

Make a well in dry mixture and pour wet mixture into well just to moisten. Spoon into well-greased muffin cups and sprinkle with a topping of 1/4 cup each butter, brown sugar, flour and rolled oats. Bake at 400° for 25 mins.

 

Tomato soup cake: an old favourite

Cream together in one bowl:

  • 1/2 cup butter
  • 1 1/3 cup sugar

Add 2 eggs, beaten

Combine and add to batter:

  • 1 tin tomato soup
  • 1/4 cup water

Combine in another bowl:

  • 2 cups flour                       
  • 4 tsp baking powder
  • 1 tsp baking soda           
  • 1 1/2 tsp nutmeg
  • 1 tsp cinnamon                       
  • 1/2 tsp cloves
  • 2/3 cup raisins                       
  • 2/3 cup chopped nuts

Blend all together and spoon into greased and floured 9" x 13" baking tin. Bake at 350° for 40 mins. Cool and frost with favourite frosting
