I came across a very good Microwaving for One or Two recipe book by Betty Crocker and found it gave nice and easy recipes, so here are three for you to try! These recipes are for two.
ORIENTAL-STYLE BEEF AND VEGETABLES:
½lb beef boneless steak ¼ cup water
2 tbsp marg. or butter 2 tsp sugar
1 tsp instant bouillon 1 tsp cornstarch
1 tsp soya sauce 4 green onions chopped
2 cups bite-sized spinach Mushrooms thinly sliced
½ cup cooked rice
Cut beef into strips. Mix beef, water, margarine, sugar, bouillon, cornstarch and soya sauce into 1½ qt casserole.
Cover tightly and microwave on medium stirring twice until beef is tender (4-7 mins). Stir in onions and celery. Re-cover tightly and microwave until vegetables are crisp/tender (2-3 mins). Stir in spinach and mushrooms, re-cover until spinach is cooked (2-3 mins). Serve with rice.
TUNA-MUSHROOM CASSEROLE:
1 cup hot cooked noodles 1 can tuna, drained
1/3 cup dairy soured cream ¼ cup milk
1/4 tsp salt 1/8 tsp pepper
1 small jar mushrooms, drained 2 tbsp breadcrumbs
2 tbsp Parmesan cheese 1 tbsp margarine
Snipped parsley.
Mix noodles, sour cream, milk, salt, and pepper in 1 qt casserole. Cover tightly and microwave on medium 3 mins. Stir.
Mix breadcrumbs, cheese and margarine. Sprinkle over tuna mixture. Microwave uncovered until hot (3-6 mins). Sprinkle with parsley.
WINE-BARBECUE CHICKEN DRUMSTICKS:
2 chicken drumsticks 3 tbsp barbecue sauce
1 tbsp dry red wine Dash of garlic salt and pepper
Place chicken drumsticks in 16 oz shallow casserole. Mix remaining ingredients and pour over chicken. Cover with waxed paper and microwave on medium-high until done (6-8 mins). Spoon sauce over chicken.
