Here are three different chicken recipes I think you may enjoy!

GRILLED SESAME CHICKEN

1 tbls brown sugar                        3 tbls reduced sodium soy sauce

2 tbls sesame seeds                        2 cloves chopped garlic

1/8 tsp black pepper                        Chicken pieces (your choice)

Combine all ingredients except chicken in a shallow dish. Mix well. Add chicken, turning to coat. Cover and marinate in the fridge at least 30 minutes, then remove the chicken pieces.

Grill until juices run clear when pierced., then serve with mashed sweet potatoes.


FOCACCIA CHICKEN SANDWICHES

1 8"-10" tomato or onion Focaccia (Italian flatbread)

4 tbls mayonnaise  (or light)

2 tbls basil

1 cup fresh spinach leaves

1.3/4 cups cooked chicken, sliced

1 tomato, sliced

Cut bread in half, horizontally. In a small bowl, stir together mayonnaise and basil. Spread cut sides of the bread with the mayonnaise mixture. Layer spinach leaves, chicken slices and tomato slices between bread halves.

Cut into quarters and enjoy

 

DIJONNAISE DRUMSTICKS

8 chicken drumsticks                        1 tbls Dijonnaise mustard

1 cup Panko (Japanese style breadcrumbs)

Salt & Pepper

Preheat oven to 450 degrees. Line a baking pan with aluminum foil. Brush the drumsticks with the mustard and coat with panko. Press down to adhere.

Place the drumsticks in the prepared pan and bake for 25 minutes or until crumbs are golden and juices run clear when pireced. Serve with mashed potatoes made with chicken broth instead of milk.
